What we buy, and how we prove it.

Morningbrewcorner treats green coffee, roast, water and waste as controlled inputs. The same specifications apply at the King Street counter and at every pantry we stock in the Greater Toronto Area.

Origin

Green coffee selection

We buy from producing regions when the harvest is actually on the water, not when a catalogue still lists last year’s lot. Typical sources through a year include washed lots from East Africa and Central America, and a smaller share of natural or honey-processed coffees when the cup is clean enough for a workplace filter bar.

Selection is a protocol: a sample is cupped against a defect threshold and a flavour standard, the offer is held only if the arrival matches the sample, and the lot is rejected if it does not. We do not stretch a failing arrival by blending it into the house espresso.

The house blend exists so that high-volume espresso stations stay consistent when a single origin would move too often. The single-origin rotation — six changes in a calendar year — is reserved for filter service at the counter and at client stations that have asked for it. Both products are specified in the proposal so a floor is not surprised by a change of colour in the cup.

Roast

Roast calibration

Espresso and filter are roasted on separate profiles. The espresso profile is built for the machine families we install — multi-group traditional machines at the counter and on busy floors, and smaller automatic units where a pantry has no barista. The filter profile is built for batch brew and pour-over, and is not used on an espresso station to “use up” a lot.

When a client’s equipment changes, the profile is recommissioned against that chassis, not copied from a generic curve. Charge weight, development time and end temperature are recorded against the lot number. A profile is retired with the lot; we do not keep roasting a finished coffee to an old curve because the paperwork is convenient.

Logistics

Freshness and logistics

Every bag that leaves us is dated at roast. Coffee is not placed on a client station more than fourteen days after that date. The replenishment scheme is built backwards from that limit: roast, rest, pick, deliver inside the weekday windows, and rotate oldest stock first on the pantry shelf.

Standing orders are written to the station, not to the loading dock. If a floor is closed or a meeting load is cancelled, the next drop is reduced so that we do not park surplus in a cupboard past the fourteen-day mark. Surplus that cannot be placed is withdrawn on the following visit and is not left “for later.”

Withdrawn coffee that is still inside its usable window may be used at the King Street counter. Coffee that has passed the window is not served. We do not donate stale espresso to a pantry and call it a courtesy.

Water

Water and grinders

We hold three water specifications — one for espresso machines, one for batch brew and one for the counter ice and kettle lines. Each specification sets hardness, alkalinity and chlorine. Filtration is chosen against a site sample, not against a single cartridge type for the whole city.

At the King Street counter, grinders are calibrated every morning against a reference shot and a reference brew, and again if the lot changes. On client sites under Managed or Full service, grinders are checked on the planned maintenance visit and whenever a taste complaint is raised. Staff on a Supply account receive a written grind window and are asked to call us rather than chase the burrs unaided.

Control

Quality control

Cupping is scheduled against incoming lots and against retention samples from coffee already on the road. Extraction on the counter is measured through the morning peak — brew time, beverage weight and a refractometer reading on the house espresso — and recorded against the lot.

Every machine we maintain has a service log: water filter changes, descale dates, gasket replacements and any emergency attendance. The log travels with the asset. A taste complaint from a client site is treated as a quality ticket, not as a courtesy call. We respond within one working day with either a site visit, a grind or profile adjustment, or a written finding if the issue sits with water or with a machine that must be swapped.

Waste

Waste and packaging

The King Street counter is set up for reusable tableware. Takeaway cups are available; they are not the default for guests who are staying. Delivery to workplaces uses returnable buckets and milk cans. Empties are collected on the next scheduled drop so that cardboard and plastic are not the standing method of supply.

Spent coffee grounds from the counter and from sites that ask for collection are sent to compost. We will not leave grounds in a general waste stream where a building already has an organics route. In offices we specify ceramic or glass service wherever a dishwasher exists, and we size disposable stock only to floors that have no wash-up.

The aim is a smaller disposable line, not a decorative claim. The monthly summary can show cup and lid draw-down beside coffee volume so that a facilities lead can see whether the disposable habit is shrinking.
